My first mother-in-law's mother was from Scotland. When she made tea, it was never in a mug. Always brewed in a teapot. Before you pour the water into the china pot over the tea, you fill the pot with hot water while you're getting the rest ready. Pour that water out, and when the boiling water hits the tea, it doesn't immediately cool down for a few seconds. It really does make a difference in the flavor of the tea. After many years, I still do it! I've heard & seen it mentioned elsewhere, usually from British people. But most recently, it was in The Hypnotist's Love Story, a novel by Australian Liane Moriarty.
